Veggie Cheese Dip

1 tbsp vegetable oil

2 cups cherry tomatoes, quartered

1 ½ cup fresh baby spinach, chopped

½ cup diced green bell pepper

½ cup diced red onion

2 ½ cup button mushrooms, cut into small chunks

1 cup fresh sweet corn(you may use frozen if you have to)

1 15.5oz jar of Tostitos brand reduced fat zesty cheese dip

1 tbsp fresh parsley, chopped


Heat the oil in a nonstick pan over medium high heat and add the tomatoes, pepper, onion, spinach, mushrooms and corn. Cook the vegetables for about 4 minutes.


Remove the vegetables from the pan into a heat ceramic or glass bowl. Add the cheese and the parsley and combine well. Serve in this bowl or pour into a serving. Serve while hot with chips or fresh vegetables for dipping.
