Bacon Tomato Cups Makes 30 cups



10 slices center cut bacon

1 large tomato, seeded and chopped

½ of a medium onion, chopped

3 oz shredded swiss cheese

½ cup mayonnaise

1 tsp dried basil

2 packages mini phyllo cups


Preheat oven to 375º


Place mini phyllo cups into mini muffin pans.


In a skillet over medium heat, cook the bacon until crisp. Drain on a paper towel. Crumble the bacon when cool and place in a medium mixing bowl.


Add the chopped tomato, onion, cheese, mayonnaise and basil.


Fill each phyllo cup and bake for 10-12 minutes or until golden brown.
