2/3 cup light brown sugar
½ cup soy sauce
1/3 cup sugar
¼ cup water
2 tbsp white wine vinegar
2 tsp rice vinegar
1 tsp ground ginger
Combine all of the ingredients in a medium saucepan over medium high heat and stir to combine.
Bring the mixture to a simmer and lower the heat to medium low heat. Let the mixture simmer for 30 minutes and then remove from the heat.
Allow to cool for an hour to thicken. At this point it can be used immediately or saved in the refrigerator as an ingredient in other recipes.
