Low Fat Banana Bread



5 large very ripe bananas

1 cup whole wheat flour

1 cup flour

2 tsp baking powder

1 tsp baking soda

½ tsp salt

5 tsp butter, softened

½ cup brown sugar, packed

1 large egg

¼ cup skim milk

½ cup chopped walnuts


Preheat oven to 350º


Spray a 9 x 5 loaf pan with cooking spray and set aside.


Peel and mash 3 of the bananas in a small bowl. Cut the remaining 2 bananas into chunks and place in a separate bowl.


Add the flour, baking soda, baking powder and salt to a large sifter and sift into a medium bowl.


In a large mixing bowl, combine the butter and sugar with an electric mixer until fluffy. Add the egg and beat until mixed.


With the mixer, add the mashed bananas, flour, milk and butter mixture alternating in batches as you add. Do not over beat.


Add the banana chunks and walnuts, and spoon the batter into the prepared pan.


Bake for about an hour, or until a knife inserted into the center comes out clean.


Cool for at least 15 minutes and serve.
