Tomato-Cheese Crostini

1 french bread baguette

3 tbsp extra virgin olive oil

8 oz goat cheese with herbs

3/4 cup of ricotta cheese

2 cups of finely shredded mozzarella cheese

1 clove of garlic, minced

Julienne sundried tomatoes

Preheat the oven to 300°

Slice the bread into ¼” slices. Brush the top of each slice with the olive oil and place on a baking sheet. Bake for approximately 12 minutes or until golden brown.

Increase the oven temperature to 350°

Mix the goat cheese, ricotta cheese, mozzarella and the garlic with a dash of black pepper in a bowl.

Spread the cheese mixture on each bread slice, being careful not to break them. Top each with a piece or two of the julienne tomatoes.

Bake for 3 minutes or until the cheese begins to melt.
