1lb Salmon filet, with skin
1/3 cup light brown sugar
2 tsp lemon pepper
1 tsp garlic powder
1/3 cup soy sauce
1 tbsp extra virgin olive oil
1 tbsp grated fresh ginger
1/3 cup orange juice
Preheat the broiler
Rub the salmon with 1 tbsp of brown sugar. Lightly sprinkle the salmon with 1 tsp of lemon pepper and 1 tsp of garlic powder and rub the seasonings into the fish.
In a small saucepan, over medium heat, cook the soy sauce, olive oil, ginger, remaining brown sugar, lemon pepper and garlic powder. Bring to a gentle simmer stirring constantly until the sugar has dissolved. Remove from the heat and stir in the orange juice.
Place the fish and the marinade in a large zip loc bag or a large casserole dish that can be covered, and refrigerate for at least 3 hours.
Place the fish on a foil baking sheet (reserving the marinade) skin side up. Broil for 2 minutes. Remove from the oven and pull the skin off and baste with the marinade.
Return the fish to the oven and broil for another 2 minutes. Turn the fish and broil until the fish flakes easily (about 4 minutes more).
Remove from the oven and let stand for 5 minutes before serving.
