Snow Pea Pods with Pepper Cheese

50-60 snow peas

½ lb Boursin pepper cheese, softened


Remove the stem end of the peas, remove the string and blanche them in a large pot of boiling water for 30 seconds. Plunge them immediately into cool water to stop the cooking and preserve the green color.


With a sharp knife, slit open the straight seam of each snow pea and add the cheese.
