Salmon with Lime Cilantro Butter Serves 6

Marinade

4 tbsp fresh lime juice

4 tbsp soy sauce

4 tbsp vegetable oil


Salmon

2lb salmon fillet, skin removed


Lime Cilantro Butter

½ cup butter, melted

4 tbsp fresh lime juice

4 tbsp chopped fresh cilantro


In a large glass baking dish, whisk together the marinade ingredients. Add the salmon, turning once to coat. Cover the dish and refrigerate for 30-60 minutes.


In a small bowl combine the butter ingredients and set aside.


Preheat the oven to 425° if baking. Bake for 30-40 minutes or until the fish flakes.


Heat the grill and oil the rack. Grill over medium to high heat for 10-17 minutes or until the fish flakes.


Remove from heat and baste the salmon with the lime cilantro butter before serving.
