Pecan Pie


9” pie crust (your favorite recipe or store bought)

1 cup sugar

3 tbsp brown sugar

½ tsp salt

1 cup light corn syrup

1/3 cup melted butter

1 tsp vanilla

3 whole eggs

1 heaping cup chopped pecans


Preheat oven to 350º


Make your pie crust if not store bought. Do not bake.


In a large bowl, combine the sugar, brown sugar, salt, corn syrup, butter and vanilla.


In a separate bowl, beat the eggs until frothy and very light in color, with an electric mixer. Add to the sugar mixture and stir to combine.


Place the pecans in the bottom of the pie crust and top with the egg batter.


Lightly cover the top of the pie and the crust with foil and bake for 30 minutes. Remove the foil and bake for another 20 minutes or until just set. It should jiggle just a little in the center. If it needs longer to bake than suggested you should cover the center again.


Watch your crust, you may need to cover it again with the foil so it doesn’t get too dark.
