Key Lime Cookies                                         Makes 4 Dozen Cookies


1 cup butter, softened

¾ cup sugar

1 large egg

Zest of 3 key limes, preferred (or 1 regular lime)

2 cups flour

½ tsp baking powder

½ tsp salt

 

Glaze

1 ½ cup powdered sugar

2 tbsp key lime juice (or regular lime juice)

1 tbsp heavy cream

 

Preheat the oven to 375°

 

Line cookie sheets with parchment paper and set aside.

 

In a large bowl, mix the butter and sugar until creamy. Add the egg until well blended.

 

Add the lime zest and blend.

 

Add the flour ½ cup at a time until completely blended.

 

Using a small cookie scoop or tablespoon scoop the dough and form into a ball. Place the ball on a cookie sheet and slightly flatten with your palm.

 

Bake for 9-10 minutes or until the center is set. Th cookies will not brown. Let the cookies completely cool on a cooling rack or parchment paper.

 

In a small shallow bowl, mix the glaze ingredients until smooth.

 

Once the cookies have cooled, dip the tops of the cookies into the glaze and return them to the rack or paper to dry.

 

These cookies taste great refrigerated.
