Panko Crusted Salmon Serves 4

4 (6oz) salmon filets, skin removed

salt and pepper to taste

2 tbsp honey mustard

2 tsp fresh thyme leaves

2/3 cup panko

4 tsp extra virgin olive oil

2 tbsp chopped Italian parsley (flat leaf)

½ tsp paprika


Preheat the oven to 400°


Lightly spray a foil lined cookie sheet or a foil baking sheet with cooking spray and place the salmon on the sheet. Sprinkle with salt and pepper.


In a small bowl combine the mustard and 1 tsp of thyme. In another small bowl mix the panko with the remaining thyme, olive oil, parsley and paprika. Add a little salt and pepper.


Spread the mustard mixture on the salmon and top with the panko mixture.


Bake for 12-15 minutes or until the fish flakes.
