Caprese Salad with Balsamic Reduction Serves 4

1 cup balsamic vinegar

¼ cup honey

3 large ripe tomatoes, cut into ½” slices

1 16oz fresh mozzarella, cut into ¼” slices

salt and pepper, to taste

fresh basil leaves

¼ cup extra virgin olive oil


In a small saucepan over high heat, combine the vinegar and honey and bring to a boil. Reduce the heat to low and simmer until the mixture has reduced to 1/3 cup. Set aside.


Arrange the slices of tomato, mozzarella and basil leaves on a platter alternating to create a decorative salad. Season with the salt and pepper and drizzle with the balsamic reduction.
