Buffalo Chicken Salad Serves 15

1 ½ package of penne pasta

½ cup plus 2 tbsp mayonnaise

1 ¼ cup blue cheese dressing (I prefer chunky)

½ cup buffalo wing sauce, more if you love it hot!

1 ½ tsp salt

½ tsp black pepper

1 store roasted chicken, boned and cut up

¾ cup red bell pepper, diced

¾ cup green bell pepper, diced

1 ¼ cup red onion, diced


Cook the pasta according to the package directions for firm or al dente. Drain and set aside.


In a large bowl combine the mayonnaise, blue cheese dressing, wing sauce, salt and pepper. Add the chicken, peppers, onion and pasta. Toss to coat with the dressing.


Cover and refrigerate for 1-2 hours before serving.
