Baked Sausage & Peppers

3 red bell peppers

3yellow bell peppers

3orange bell peppers

2 ½ large Vidalia onions

8 large garlic cloves, chopped

2 tablespoons dried oregano

3/4 teaspoon dried crushed red pepper

1/4 cup extra virgin olive oil

4 pounds sweet Italian sausages

Preheat oven to 350°F.

Cut peppers in 2” pieces and place in a large foil roaster pan. Cut the onion into small 1” wedges and add to the pan.

Add the next 3 ingredients. Pour oil over and stir to coat. Season with salt and pepper.

Brown sausages in heavy large nonstick skillet over high heat, turning often, about 8 minutes. Slice each sausage into 3 to 4 pieces and add to the pan.

Bake until sausages are cooked through and peppers are tender, stirring occasionally, about 45 minutes.
