1 French bread baguette, sliced into (16)¼ “ rounds
2-3tbsp olive oil
8oz brie, with rind removed
½ cup sugared chopped walnuts*
1-2 pears, halved, cored and sliced thin
4tbsp honey
1tbsp balsamic vinegar
1/8tsp salt
Preheat the oven to 350°
Brush the tops of the baguette slices with the olive oil and place on a baking sheet. Place in the oven and bake until lightly golden. About 10 minutes.
Meanwhile combine the honey, balsamic vinegar and salt in a small bowl. Set aside.
Increase the oven temperature to broil and make sure the top rack is at least 6” from the element.
Layer the crostini with a slice of cheese and top with a slice of pear. Broil until the cheese starts to melt. Remove from the oven and drizzle with the honey syrup. Add a few pieces of the walnuts and serve!
To make the sugared walnuts, add 2tbsp of white granulated sugar to a small sauté pan and add ½ cup of chopped walnuts. Stir constantly over medium high heat until the sugar has melted and the walnuts are covered. Cool on a piece of waxed paper.
These walnuts can be purchased already sugar covered in some grocery stores.
