Baked Brie in Phyllo

¼ cup of apricot preserves

½ lb wheel of brie

10 to 12 sheets of phyllo dough, thawed

½ cup butter, melted




Spread the the preserves on top of the brie. (you may add more if you desire)

Wrap the brie with the thawed phyllo dough one sheet at a time, brushing the entire sheet with butter after wrapping. After each addition turn the brie over before adding the next sheet.


Keep the unused phyllo sheets covered with a damp paper towel as you work.


Cover and refrigerate.


When you are ready to serve: Preheat the oven to 425°. Place the brie in a shallow baking dish and bake for 10-12 minutes or until golden brown. Let the cheese stand for 10 minutes and serve with crackers of your choice.


You may choose to garnish with grapes.
