Asian Chicken Salad Serves 6

¾ cup vegetable oil

¼ cup plus 1 tbsp rice vinegar

1 tbsp lite soy sauce

3 3oz pkg of chicken flavored Ramen noodles, broken

1 large head of cabbage, shredded (Napa cabbage is also good)

1 head of iceberg lettuce, shredded

2 bunch of green onions, sliced thin

1 store roasted chicken shredded

1 cup sliced almonds, toasted

3tbsp chopped fresh cilantro, optional


In a small saucepan over medium heat, whisk together the oil, vinegar, soy sauce and ramen flavor packets. Bring to a boil and remove from heat. Refrigerate until chilled.


In a large salad bowl, combine the cabbage, lettuce, green onions, broken noodles, chicken and almonds.


When the dressing is chilled pour over the salad and toss. Sprinkle with the cilantro or with an herb mill add some parsley.
