Arugula with Roasted Chicken Serves 2

6 cups baby Arugula

1 store roasted chicken

½ cup pine nuts

1 cup shaved Parmesan

1/3 cup Newman's Own olive oil & vinegar dressing

1 lemon, cut in quarters and seeds removed

Remove the breast meat from the chicken and slice.

In a large bowl combine the arugula, pine nuts and parmesan and toss.

Add the dressing a little at a time being carefully not to over dress. Toss and add to a dinner plate.

Top with the chicken and serve with the lemon. (the lemon really makes the salad!)

Serve with warm crusty bread and a nice white wine.
