All Purpose Gravy Makes 4.5 cups

½ cup fat

½ cup flour

enough pan juices and chicken or beef stock to make 4 cups

½ cup heavy cream

salt & pepper to taste



Add the flour to the fat until blended. Stir in the pan juices slowly; cook and stir the gravy until smooth. Simmer 5 minutes.


Add the cream and season to taste.
