Zucchini Fritters Makes 8

1lb zucchini, grated

2 tsp sea salt

2 eggs, beaten

3 scallions, chopped

4 cloves garlic, minced

½ tsp baking powder

¾ cup super fine almond flour

½ cup shredded cheddar

¼ cup extra virgin olive oil


Place the grated zucchini in a colander, in the sink and sprinkle with the salt and mix. Let the zucchini stand for about 20 minutes and then squeeze out the excess water and transfer to a mixing bowl.


Add the eggs, scallions, cheese and garlic and mix.


Add the baking powder and flour to the zucchini and mix well.


Heat the oil in a large pan over medium high heat and drop about ¼ cup full of the zucchini mixture into the pan; flatten slightly with the back of a large spoon or spatula.


Cook for about 5 minutes on the first side or until a deep golden brown. Flip and cook a few minutes longer. Drain on a paper towel and then move to a serving platter. You can keep them warm in the oven. Serve hot with your favorite dressing or topping.
