Shrimp Scampi III


3 garlic cloves, minced

¼ cup butter

¼ cup extra virgin olive oil

1lb uncooked medium shrimp, peeled, deveined and tails removed

¼ cup fresh lemon juice

½ tsp pepper

½ tsp dried oregano

½ cup freshly grated Parmesan

¼ cup dry bread crumbs

¼ cup minced fresh parsley

8oz linguine pasta


In a large skillet sauté the garlic in the butter and olive oil until fragrant. Add the shrimp, lemon juice, and pepper. Cook until the shrimp turns pink.


In a small bowl, combine the oregano, parmesan, bread crumbs and parsley. Sprinkle on top of the shrimp and broil for 2-3 minutes or until the breads crumbs start to brown.


Serve over linguine.
