Roasted Heirloom Tomatoes Serves 4

4 cups Heirloom tomatoes

4 cloves of garlic, sliced

3 tbsp extra virgin olive oil

salt & pepper to taste


Preheat the oven to 450°


Use a foil cookie sheet or a cookie sheet covered in foil.


Place the tomatoes and the garlic in a large bowl and toss with the olive oil until evenly coated. Season with salt & pepper and spread on the foil sheet.


Bake for 15 to 20 minutes or until the skins have popped and the tomatoes have begun to brown.
