Quiche Lorraine

9” pie crust

12 slices bacon, cooked and crumbled

1 cup shredded Swiss cheese

1/3 cup finely chopped onion

4 eggs

2 cups heavy cream

¾ tsp salt

¼ tsp pepper

1/8 tsp ground red pepper


Preheat the oven to 425°.


Prepare the pastry.


Sprinkle the bacon, cheese and onion in the pastry lined pie plate.


Beat the eggs slightly and add the remaining ingredients. Pour into the pie plate.


Bake uncovered for 15 minutes and reduce the oven temperature to 300°. Bake until a knife inserted in the center comes out clean.


Let stand 10 minutes before cutting.
