1lb asparagus, trimmed
1 ½ cup Panko
¾ cup freshly grated Parmesan
½ cup flour
3 eggs, beaten
salt and pepper to taste
olive oil cooking spray
Preheat the oven to 425°
Lightly spray a baking sheet with the olive oil.
Place the flour in a Ziploc bag and set aside.
In another Ziploc bag, combine the Panko, parmesan, salt and pepper.
Beat the eggs in a rectangular shallow dish.
Place the asparagus, in small batches into the bag with the flour and shake until the asparagus is coated.
Remove from the bag and place in the egg. Evenly coat with the egg and then add to the bag with the panko and parmesan. Shake until well coated with the mixture.
Place the asparagus on the prepared baking sheet.
Bake for 10 minutes, or until golden.
