Pancakes Makes 18 4” pancakes

2 eggs

2 cup flour

2 ¼ cup milk

¼ cup vegetable oil

2tbsp melted butter

1 ½ tbsp. baking powder

1tsp salt


Beat the eggs with a wire whisk until fluffy; beat in the remaining ingredients until well blended.


Ladle onto a greased griddle and cook over medium heat until golden on both sides. About 1 minute each side.


Serve with butter and warm maple syrup.
