Mexican Meatloaf Serves 8
2 eggs, slightly beaten
1 (14.5oz) Ro*tel diced tomatoes with green chiles
¼ cup onion, diced
1 tsp Worcestershire sauce
1 tsp salt
¼ tsp black pepper
2lb 90% lean ground beef
1 cup crushed Cheezits hot and spicy crackers
Topping:
1 cup shredded cheddar cheese
1 cup chunky salsa
Preheat the oven to 350°.
In a large bowl combine the ground beef, eggs, tomatoes, onion, Worcestershire, salt and pepper. Add the crackers. Mix well to combine all the ingredients.
Place the meat mixture in a foil or glass baking dish and form into a loaf shape. Bake for 40 minutes.
Remove the meatloaf from the oven and spread a layer of salsa on the top of the loaf. Sprinkle with the cheddar cheese. Return the meatloaf to the oven and continue baking for another 15-20 minutes or until the internal temperature reads 160 degrees and the meat is no longer pink in the center.
