1lb lean ground beef
1 cup crushed pork rinds
½ cup grated cheddar
2 tbsp heavy cream
2 tbsp water
½ tsp garlic powder
½ tsp salt
½ tsp ground pepper
1 tsp McCormick Grill Mates Smokehouse Maple
2 tbsp reduced sugar ketchup
2 tbsp Italian salad dressing
Preheat oven to 400°
Spray a foil baking sheet with butter cooking spray.
In a large mixing bowl combine the ground beef with the next 9 ingredients until well mixed.
Roll into 12 meatballs about 2” each. Bake for 15 minutes or until cooked.
In a small bowl whisk the ketchup and salad dressing together and brush the meatballs with the mixture. Use all of it. Sprinkle the meatballs with the Grill Mates for added flavor.
Return the meatballs to the oven and turn on the broiler. Broil for 1-2 minutes or until the sauce begins to caramelize.
Serve hot with your favorite low carb sides.
