Keto Parmesan Oven Baked Tomatoes Serves 4

4 medium tomatoes, center of stem removed and cut in half

2 slices of Thin slim bread, torn into pieces

½ cup freshly grated Parmesan cheese

2 cloves garlic, minced

2 tbsp extra virgin olive oil

2tbsp fresh chopped parsley

2tbsp fresh chopped basil

2 tbsp fresh chopped oregano

Salt and pepper to taste

Preheat oven to 400°

Using a blender or chopper, process the bread slices into breadcrumbs. Transfer to a medium bowl.

Add the remaining ingredients to the breadcrumbs and toss.

Place the halved tomatoes into a medium foil baking pan, season with salt and pepper. Top each tomato with breadcrumb mixture, be generous.

Bake for 15-20 minutes or until the topping is golden brown.
