Hoisin Meatloaf Serves 4

1lb 90% lean ground beef

½ cup panko breadcrumbs

2tbsp lite soy sauce

4tbsp Hoisin sauce, divided

2 large scallions, thinly sliced and divided

1 egg

1 clove garlic, minced

Preheat the oven to 350°.

Spray a foil baking sheet with cooking spray.

In a large bowl combine the beef, panko, soy sauce, 2tbsp Hoisin, scallion, egg and garlic. Mix well.

Place the meat mixture on the foil baking sheet and form into a loaf. Spread the remaining Hoisin sauce over the top of the loaf, adding more if needed.

Place in the oven and bake for 50-60 minutes. Garnish with additional scallions and serve.
