Serves 4
Salmon
4 6oz salmon fillets, no skin
1 tsp paprika
1 tsp chili powder
¼ tsp sugar
1 tsp kosher salt
4 tbsp 100% maple syrup
Salsa
3 cups diced fresh pineapple
2 tablespoons fresh chopped cilantro
1 ½ tbsp 100% maple syrup
In a medium bowl combine all the salsa ingredients and set aside.
Mix the paprika, chili powder, salt and sugar together in a small bowl.
Place the salmon in a baking dish and coat with the spice mixture. Cook on an oiled grill, for 6-8 minutes or until almost done; brush with the maple syrup and continue cooking until done.
Remove the salmon from the grill and serve with the salsa as a garnish. Serve the remaining salsa in a bowl for additional garnish if desired.
