Grilled Halibut with Cilantro Garlic Butter Serves 4

4 6oz Halibut filets

1 lime, cut into wedges

salt and pepper to taste

3 cloves of garlic, chopped

½ cup chopped fresh cilantro

1 tbsp fresh lime juice

2 tbsp butter

1 tbsp extra virgin olive oil


Preheat the grill for high heat or the oven to 400°


Squeeze the juice from each lime wedge on the halibut filets. Season with the salt and pepper.


Cook the fish until it easily flakes with a fork and remove to a warm platter.


Heat the oil in a skillet over medium heat and add the garlic. Cook and stir just until fragrant. About 2 minutes.


Stir in the butter and the remaining lime juice. Add the cilantro and serve over the fish.
