Grilled Broccoli Serves 6

8 cups fresh broccoli florets

¼ cup fresh lemon juice

¼ cup extra virgin olive oil

½ tsp salt

½ tsp black pepper

1 ½ cup grated Parmesan cheese

Place the broccoli in a large bowl. In a small bowl combine the olive oil, lemon juice, salt and pepper; pour over the broccoli and toss to coat. Let stand for 30 minutes.

Place the grated Parmesan in a large resealable plastic bag, add the broccoli a few pieces at time and shake to coat. Remove the broccoli to a foil pan coated with an olive oil cooking spray and cover.

Place the pan on the grill and grill for 8-10 minutes, shaking the pan from side to side frequently.

Place the grilled broccoli in a serving dish and garnish with shaved Parmesan if desired.
