Garlic Mashed Cauliflower Serves 4

1 head cauliflower, cut into florets

1 tbsp extra virgin olive oil

1 clove garlic, minced

¼ cup grated parmesan cheese

1 tbsp reduced fat cream cheese

½ tsp kosher salt

1/8 tsp freshly ground black pepper


Fill a large pot with a steamer insert, just below the bottom of the steamer. Bring the water to a boil and add the cauliflower. Cover and cook until tender. About 10 minutes.


In a small frying pan over medium heat cook the garlic in the olive oil until softened. Remove from the heat.


Place half of the cauliflower in a food processor and blend on high until smooth. Add the remaining cauliflower to the processor, a few pieces at a time until all the cauliflower is creamy.


Blend in the garlic, Parmesan, cream cheese, salt and pepper. Serve.
