Crustless Spinach Quiche Serves 6

1 tbsp vegetable oil

1 onion, chopped

1 (10) oz package frozen spinach, thawed and drained

5 eggs, beaten

3 cup shredded Muenster cheese

¼ tsp salt

1/8 tsp black pepper


Preheat the oven to 350°


Lightly grease a 9” pie plate.


Heat the oil in a large skillet over medium high heat and add the onions. Cook until the onions are soft, stirring occasionally.


Stir in the spinach and cook until the excess water has evaporated. Remove from the heat.


In a large bowl, combine the eggs, cheese, salt and pepper. Add the spinach mixture and stir to combine. Pour the mixture into the prepared pie plate.


Bake for 30 minutes or until the eggs have set. Cool for about 10 minutes before cutting.
