Crumb Topped Salmon Serves 4

1 ½ cup soft bread crumbs (use your favorite bread)

2 tbsp minced fresh parsley

1 tbsp fresh thyme

2 garlic cloves, minced

1 tsp grated lemon peel

½ tsp salt

¼ tsp lemon pepper

¼ tsp paprika

1 ½ lb salmon fillet

refrigerated butter spray


Preheat the oven to 350°


Coat a 13 x 9 baking dish with cooking spray.


In a medium bowl, combine the first 8 ingredients and set aside.


Pat the salmon dry. Place, skin side down in the coated baking dish.


Spray the salmon with the refrigerated butter spray; cover with the crumb mixture. Spray the crumbs with the butter spray.


Bake uncovered for 20-30 minutes or until the fish flakes with a fork.
