Crumb Cake

3 cups flour

4tsp baking powder

½ tsp salt

2 eggs

1 ½ cup sugar

2/3 cup melted butter

1 cup milk

1 ½ tsp vanilla

confectioner’s sugar


Preheat the oven to 350°.



Sift the flour with the baking soda and salt. Set aside.


In a large bowl, with a mixer, at medium speed beat the eggs until frothy. Add the sugar and butter until well mixed. Beat in the milk and the vanilla.


Stir in the flour mixture until well combined. Pour the batter into a greased and floured jelly roll pan and bake for 15 minutes. Remove the cake from the oven and spread the crumbs (recipe below) on top. Return the cake to the oven and continue baking for another 15 minutes.


Remove from the oven and let cool. Dust the top of the cake with confectioner’s sugar.


Commercial Cake Mix Method:


1 box of Duncan Hines Yellow Cake Mix

3 eggs

1 1/3 cup water

1 ½ tsp vanilla


Combine the ingredients and beat at medium speed with a mixer for 4 minutes. Continue as above directed.

Crumbs:


1lb butter, 2 sticks softened and 2 sticks melted

4 cups flour

1 1/3 cup sugar

1 tbsp vanilla

1 tbsp cinnamon

Pinch of salt


Combine the flour, sugar, vanilla and cinnamon in a large bowl. Add the butter to the flour mixture. Mix well.
