Crispy Herb Baked Chicken

2/3 cup Instant potato flakes

1/3 cup freshly grated Parmesan cheese

2 tsp dried parsley

1 tsp garlic salt

1lb thin sliced chicken filets

1/3 cup butter, melted



Preheat the oven to 350°


Use a foil cookie sheet or line a regular cookie sheet with foil.


In a medium bowl combine the potato flakes, Parmesan, parsley and garlic salt; mix well.


Dip each piece of chicken in the butter and then coat both sides well in the potato flake mixture. Place on the cookie sheet.


Bake for about 25-30 minutes. Serve with gravy and cranberry sauce.
