4lb corned beef
4 bay laves
5 cloves garlic, minced
2 carrots cut in half and sliced
3 unpeeled red potatoes, quartered
1 cabbage, cut into 8 wedges
½ tsp peppercorns
1 can beer
1 cup chicken broth
6 whole cloves
Pour the beer and chicken broth into a crock-pot and stir in the cloves, peppercorns, bay leaves and the garlic.
Place the corned beef in the center of the pot and arrange the carrots and potatoes around the meat. Place the cabbage wedges on the top.
Add enough water to raise the crockpot liquid level 1/3 of the way to the top. Cover and cook on low for 8 ½ hours.
Serve with homemade Irish Soda Bread.
