2 cups mashed potatoes (prepared with butter and milk)
¼ cup flour
¼ cup cream style corn
1 egg, beaten
3 tbsp finely diced onion
1 tsp minced fresh parsley
½ tsp salt
½ tsp fresh minced garlic
1/8 tsp pepper
3 tbsp vegetable oil, divided
In large bowl, combine the first 9 ingredients.
In a large skillet heat 1 tbsp of oil; drop four ¼ cupfuls of “batter” into the skillet. Cook for 1-2 minutes on each side or until golden brown. Repeat with the remaining oil and “batter”.
