Coconut Macadamia Encrusted Tilapia

4 Tilapia filets

14.5oz coconut milk

¼ cup honey

½ cup panko

1 ¼ cup macadamia nuts

¼ cup shredded coconut

4 tbsp honey

3 tbsp butter



Preheat oven to 350°


Combine the coconut milk and ¼ cup honey in a large baking dish, and add the tilapia. Marinate for 30 minutes or longer.


Place the macadamia nuts in a food processor and pulse until finely crushed.


Combine with the panko and shredded coconut on a large plate.


Grease a large cookie sheet or foil sheet.


Dredge each tilapia filet through the nut mixture until well coated and place on prepared pan.


Sprinkle the remaining nut mixture over the filets.


Combine the remaining honey and the butter in a small bowl and microwave until melted; drizzle over the tilapia.


Bake for 15-20 minutes depending on the size of your filets.
