Chili Serves 12

2lb lean ground beef

1lb bulk Italian sausage

3 15oz cans chili beans, drained

1 15oz can chili beans in spicy sauce

2 28oz cans diced tomatoes with liquid

1 6oz can tomato paste

1 Vidalia onion, diced

3 stalks celery, diced

1 green bell pepper, diced

1 red bell pepper, diced

2 green Chile peppers, diced

1 tbsp bacon bits

4 cubes beef bouillon

½ cup beer

¼ cup chili powder

1tbsp Worcestershire sauce

1 tbsp minced garlic

1 tbsp dried oregano

2 tsp ground cumin

2 tsp hot pepper sauce

1 tsp dried basil

1 tsp salt

1 tsp black pepper

1 tsp cayenne pepper

1 tsp paprika

1 tsp sugar


Ina large soup or pasta pot over medium high heat, cook the ground beef and sausage until browned. Drain the grease.


Add the beans, tomatoes and tomato paste to the meat. Stir in the onion, celery, peppers, bacon bits, bouillon and beer; mix well. Add the chili powder, Worcestershire, garlic, oregano, cumin, hot sauce, basil, salt, pepper, cayenne, paprika and sugar. Stir and cover.


Simmer over low heat for 2 hours, stirring occasionally.


Add additional spice to taste. Serve garnished with shredded cheddar cheese.


Serve with corn chips or corn bread.
