3 cups torn fresh baby spinach
1 cup shredded red cabbage
¼ cup thinly sliced Vidalia onion
1 cup cooked chicken, cut into small strips
2tbsp salad oil
2tbsp cider vinegar
2tbsp light brown sugar
2 slices of bacon, cooked and crumbled
1 hard boiled egg, chopped (optional)
Ina large mixing bowl combine the spinach, cabbage, chicken and onion. Cover and chill while you make the dressing.
In a small bowl combine the salad oil, vinegar, and brown sugar. Stir until the sugar has dissolved.
Pour the dressing over the spinach mixture and toss to coat. Spoon the salad onto plates and sprinkle with the egg and bacon.
