3 tbsp peanut oil
2lb ground chicken
6 cloves garlic, minced
1 large Vidalia onion, minced
¾ cup Hoisin sauce
6 tbsp soy sauce
3 tbsp rice wine vinegar
¾ tsp ground ginger
3 tbsp Sriracha
2 5oz cans diced water chestnuts, drained
6 green onions, sliced thin
Salt & pepper to taste
2 heads Bibb lettuce
Heat the oil in a large saucepan and add the ground chicken; cook until browned. Make sure to crumble the meat as it cooks. Drain.
Add the chicken back to the pan and add the garlic, onion, hoisin, soy sauce, rice wine vinegar, ginger and Sriracha. Cook until the onions are translucent.
Stir in the water chestnuts and green onions; cook for another minute or 2. Season with the salt and pepper to taste and serve with the Bibb lettuce and enjoy!
