Chicken in a Packet Serves 4

4 tbsp butter

4 split chicken breast, bone in, skinless

3 cups herbed stuffing

½ cup water

1 large golden delicious apple, cored and quartered


Salt& pepper

Heat oven to 450º

Tear off 4 12” in length pieces of foil and fold each in half cross wise.

Grease the bottom and the top sides inside the fold.

Place 1 tbsp of butter in the center of each bottom half of the folded foil and top with ¾ cup of stuffing.

Sprinkle the stuffing with 2 tbsp of water and place a chicken breast on top.

Season the breast with paprika, salt & pepper, and tuck an apple wedge alongside of each breast.

Fold the foil closed and pinch along the edges to seal tight. Arrange the packets on a large baking sheet and bake for 35 minutes.
