Cheesecake Cranberry Bars Makes 2 ½ dozen

2 cups flour

1 ½ cups quick oats

¼ cup packed light brown sugar

1 cup butter, softened

2 cups white chocolate morsels

1 8oz package cream cheese, softened

1 (14oz) can sweetened condensed milk

¼ cup fresh lemon juice

1 tsp vanilla extract

1 (14oz) can whole berry cranberry sauce

2 tbsp cornstarch


Preheat the oven to 350°


Grease a 13 x 9 baking dish and set aside.


In a large bowl combine the flour, oats and brown sugar. Add the butter and mix until crumbly.


Stir in the morsels. Measure out 2 ½ cups of morsel mixture and set aside for the topping.

Press the remaining mixture into the baking dish. A floured spoon will be helpful.


In another large bowl, beat the cream cheese until creamy with an electric mixer. Add the condensed milk, lemon juice and the vanilla. Mix until smooth.


Pour over the crust. Combine the cranberries with the cornstarch in a bowl and spoon over the cream cheese batter.


Sprinkle the reserved morsels over the cranberries.


Bake for 35-40 minutes or until the center is set. Cool.


Cover and refrigerate for at least 3 hours. When ready to serve cut into bars.
