Carrot Turnip Casserole

1 8oz package instant stuffing mix

1 turnip, chopped

2lbs carrots, chopped

2 tbsps butter, melted

2 tbsp brown sugar

1 8oz Velveeta, grated

2 tbsp milk


Preheat the oven to 350°


Lightly grease a 2qt casserole dish.


Prepare the stuffing mix according to the package directions.


Place the turnips and the carrots in a pot with just enough water to cover. Bring to a boil and cook until tender. Drain and mash.


Mix in the butter and the brown sugar until melted.


In a medium microwaveable bowl melt the cheese. Stir in the milk and then add the cheese mixture to the turnips. Transfer to the prepared casserole dish.


Top with the stuffing mixture and bake for 20 minutes or until golden brown.
