Cajun Pot Roast with Corn and Potatoes Serves 6-10

1 4lb Pot Roast

Cajun seasoning

1 14oz bag Green Giants niblets frozen corn

1 cup chopped onion

1 cup chopped green pepper

2 14.5oz cans of diced tomatoes, undrained

¼ tsp black pepper

1tsp hot pepper sauce


Rub the entire surface of the roast with the Cajun seasoning. Place in s crock-pot and top with the corn, onion, and green pepper.


Ina small bowl combine the tomatoes. Pepper, and hot sauce with a whisk; pour over the vegetables and the roast.


Cover and cook on low for 8-10 hours.
