Blue Cheese, Spinach Meat Loaf Muffins Serves 6

1 ½ lb lean ground beef

¾ cup crumbled blue cheese

½ cup onion, finely diced

½ cup Italian breadcrumbs

½ cup chopped fresh spinach

2 eggs

2tbsp Worcestershire sauce


Preheat the oven to 375°


Grease a large muffin pan with cooking spray(or a mini muffin pan for appetizer style).


In a large bowl combine the ground beef, blue cheese, onion, breadcrumbs, spinach, eggs and Worcestershire sauce until well blended.


Divide the meat mixture evenly into the prepared pan. (I form balls to fit the size of the muffin cup).


Bake for about 30 minutes, or until the center is no longer pink. A thermometer inserted into the center should read160°
