Preheat the oven to 350°
4 slices of soft white bread, crusts removed
1 cup buttermilk
1lb ground pork
1 ½ lb lean ground beef
½ cup freshly grated Parmesan cheese
3 egg yolks
2 garlic cloves, minced
4 tbsp fresh parsley, finely chopped
Tear the bread into small pieces and place in a small bowl. Add the buttermilk to the bread and stir to coat. Let the bread soak for a few minutes.
In a large bowl combine the pork and the beef; add the bread and blend.
Add the cheese, egg yolk, garlic and parsley to the meat and mix well.
Make meatballs and add directly to your favorite sauce and cook until they are done, or bake for 20 minutes until cooked through.
I prefer to bake first and then add to my sauce. Either way Enjoy!
