Basil Buttered Beans Serves 20

20 cups fresh green beans

1 ¼ cup chopped onion

1 ¼ cup chopped celery

2 ½ cup water

1 ¼ cup butter, melted

¼ cup plus 1 tbsp minced fresh basil

2 ½ tsp salt

1 ¼ tsp black pepper



Trim the green beans and cut into 2” pieces.


In a large saucepan combine the beans, onion, celery and water. Cover and cook for 5 minutes or until the beans are tender. Drain and move to a large serving bowl.


Add the butter, basil, salt and pepper to the beans and toss to coat. Serve immediately.
